Banana Nut Muffin

You know those blue-haired ladies at church that rule the potlucks?  This recipe is SO good, they ask me for it all. the. time. *seri­ous eyes*

Cream 1 c. sugar and 1 stick of but­ter.
Add 3 large mashed banana and 2 well-beaten eggs.
Add 1 t. bak­ing soda + 4T hot water
Add 2 c. flour
Add 1/2 c. wal­nuts (optional)
Grease and flour the muf­fin tins. Bake for 20 min­utes.
[If you want it as a loaf, bake for 1 hour. You may need to cover w/ alu­minum foil 1/2 way through to keep the top a con­sis­tent brown.] Works For Me Wednesday

    These look won­der­ful. I made some banana crumb muffins just Mon­day, and wound up with too many dishes. I would love to try these, and still have a few ripe bananas enter­tain­ing gnats on my counter. Thanks!
